Fans from all over the world knew Kitsanin Thanyakulsajja's student room en masse in 2018. Thai student Kit had converted his 20-square-meter student room into the Netherlands' first omakase restaurant. The success of Kit's tiny sushi shop did not go unnoticed. The media dove on top and not long after, The Dylan offered the student his own pop-up restaurant behind a mirror in the hotel
"Omakase-shimasu, or omakase for short, loosely translated means 'I leave it to you.' It refers to the way the chef serves his guests. Instead of a set menu, the chef gets carte blanche from the guest and prepares what he feels is appropriate at that moment."
Undercover
In mid-October, Kit will open his omakase restaurant in Amsterdam Oost, called; Undercover. The young Thai promises a unique experience with high-quality sushi in an approachable atmosphere. At Undercover, an anti-dress code applies. "Never feel obliged to wear formal attire when visiting Undercover," says Kit on his website. The sushi chef asks guests not to wear perfume so as not to disturb fellow guests during their dinner. Reservations for Kit's Undercover will start soon.
"The promise of a new level of quality and craft, and the myth and intrigue of eating at an 'underground' restaurant," Kit said of his success as a sushi chef.
Sushi take-away
Until Undercover opens, you can already pick up sushi from a fixed location. The sushi quality will not be affected by takeout promises Kit. :Our takeout is designed so that it tastes better when you get home, than when you pick it up."
